Azuki TM6

400g Azuki beans
1800g Water (Max line)

Cook for:
30Min / 100°C / Speed 1.5
Drain through simmer basket, put azuki back in a bowl
40min / 100°C / Speed spoon
Add 4g salt (Maldon and Nigari)
Check the softness, if not cooked enough, add 15min.
Drain azuki through simmer basket, but correct brin in a bowl. Leave the brin to cool down. Let starch sink on the bottom.
Add 400g organic sugar in few batch. Cook
5min / 100°C / Speed spoon
Put anko in a large pot, cook down on low heat to evaporate water.

Azuki Tea

500g Azuki beans
1800ml Water (Max line)

Cook for:
45Min / 100°C / Speed 1.5
Add salt (Maldon and Nigari)
15Min / 100°C / Speed 0.5
Check the softness, if not cooked enough, add 15min.
Leave to cool down. (でんぷんが沈澱する)
Discard 500ml supernatant liquid in a strainer.
Add 625g organic sugar in few batch.

Tapioca Pearl (This recipe is for 31 portions)

1kg Frozen Black Pearl Tapioca

2L Boiling water
250g Molasses Rietsuikermelasse
€28.95- 14kg(10L)

Cook for:
Put frozen tapioca in boiling water, stir and cook for 2 min.
Drain and pour in melasse. Store chilled.
